This variation on savoury pancakes is super quick and easy! You could even make these in the morning before lunchboxes need to be packed…
Ingredients
- 1 cup plain flour
- 1 cup milk
- 1 egg
- 1/2 teaspoon bicarbonate of soda
- 3 leaves of silverbeet, stem removed, chopped
- 2/3 cup grated cheddar cheese
The flour can be wheat-based or gluten-free.
I recommend Orgran gluten-free flour which is also free of soy.
Directions
- pre-heat oven to 180 degrees C
- line an oven tray (30 x 21 cm or 21 x 21 cm) with baking paper
- place flour, milk and egg in a bowl
- dissolve the bicarbonate of soda in a dash of warm water, add to the other ingredients
- mix all the ingredients together well
- add the chopped silverbeet and grated cheese
- stir briefly to mix these evenly through the mixture
- transfer the mixture to the oven tray lined with baking paper
- bake for 20-25 min at 180 degrees C
- cut into 6-8 rectangles to serve warm or cold
Tip
You could switch out the cheddar cheese for feta cheese (60g, cubed)
